All Bad Things Must Come to an End…

Breaking Bad is my favorite television show of all time.  When I was first introduced to the show, someone gave me two seasons of dvds that I watched in about 3 days.  I’ve never been that into a tv show before.  I’m so sad to see it go but I know the time has come.  In honor of Breaking Bad coming to an end tomorrow, here’s a list of products inspired by Mr. White’s love of science…

Lemon Ricotta Cookies

All of my recipes are really just about hanging out with my friends.  I like to have my friends over, open up a bottle of wine, and snack on whatever I’ve made.  I also really enjoy baking, I find it meditative.  Cookies are always good because they travel well so after baking these, I made the rounds at my friends places dropping off cookies and hanging out.  These were delicious.  Really really good and easy recipe for something everyone enjoyed.  I found this recipe on A Cozy Kitchen and she found it on The Church Cook.  I also found it verbatim from Giada De Laurentiis on Food Network.  This made me think this recipe was good because no one had changed it at all.  I don’t know the real origin so I guess we’re all just passing this around like some 50′s housewives… Like I was saying, I can’t stress to you how soft and pillowy and delicious these were.   Try it,  you’ll like it…

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 stick unsalted butter, softened
  • 2 cups sugar
  • 2 eggs
  • 1 (15-ounce) container whole milk ricotta cheese
  • 3 tablespoons lemon juice
  • 1 lemon, zested

  • 1 1/2 cups powdered sugar
  • 3 tablespoons lemon juice
  • 1 lemon, zested

1. Preheat the oven to 375 degrees F.

2. In a medium bowl combine the flour, baking powder, and salt. Set aside.

3. In the large bowl combine the butter and the sugar. Using an electric mixer beat the butter and sugar until light and fluffy, about 3 minutes. Add the eggs, 1 at a time, beating until incorporated. Add the ricotta cheese, lemon juice, and lemon zest. Beat to combine. Stir in the dry ingredients. (Don’t over mix the batter)

4. Line 2 baking sheets with parchment paper. Spoon the dough (about 2 tablespoons for each cookie) onto the baking sheets. Bake for 15 minutes, until slightly golden at the edges. Remove from the oven and let the cookies rest on the baking sheet for 20 minutes.

1. Combine the powdered sugar, lemon juice, and lemon zest in a small bowl and stir until smooth. Spoon about 1/2-teaspoon onto each cookie and use the back of the spoon to gently spread. Let the glaze harden for about 2 hours.
